I think 64bit is nice to have if you are doing the following.

1) Lots of OLTP using what ever Database you want.
2) Caching all your static content on your web server.
3) You needs lots of memory for memcached
4) You have some application that requires more than 2 Gigabytes of
memory in a large continuous chunk / extent (What ever you want to
call it.).
5) You are not fond of Intel's hack (PAE) on their 32 bit processor line.
