While not "tag clouds" per se, Thunderbird does have a neat feature 
called "Search Folders", where you can specify search criteria (subj, 
from, to, date, etc) and save it as a "virtual" folder.
The search folder, when opened, will contain all the messages that match 
  your criteria, regardless of their actual physical folder location.

I've seen Thunderbird users that essentially only use "search folders" 
for their email organization. I personally couldn't live that way, but 
then, I seem to be in the minority in that I don't like the gmail interface.
